30 ml Altos Plata
In a flute glass add Altos Plata and top with MUMM champagne.

The reason behind this cocktail with champagne was to mix two of my favorites: wine and spirit. In this case, it’s champagne and tequila. But I give it a sophisticated twist with a dash of the beautiful, aromatic and elegant Italicus bergamot liqueur to enhance the herbal notes of Altos and the sweet notes of the champagne.
In a flute glass add Altos Plata, a few drops of Italicus and top with MUMM champagne.
Celebratory bubbles mingle with the best tequila of the Jalisco Highlands in this version of the classic Mimosa, where the orange juice is replaced by natural grapefruit juice.
30 ml Altos Plata
30 ml grapefruit juice
MUMM champagne
grapefruit peel for garnish

“In 2004 I spent six months learning from Julio Bermejo of Tommy’s Mexican restaurant in San Francisco. Their house cocktail is the Tommy’s Margarita and still remains my all-time favorite cocktail. I created The Champagne Margarita as an homage to Bermejo and his family, and also to celebrate these holidays with Altos tequila. Salud!”

30 ml Altos Reposado
20 ml lime juice
20 ml sage infused agave syrup*
20 ml pear puree
30 ml MUMM champagne
Shake first four ingredients. Fine strain into a chilled coupette glass and top up with chilled champagne. Garnish with fresh sage leaf.
* To make sage infused agave syrup* pour 300 ml of pure organic agave into a saucepan with 150 ml of water. Add ten sage leaves. Bring it to a boil, reduce heat and simmer for five minutes. Allow to cool. Strain into a glass bottle.

Add all ingredients to a shaker with ice. Shake. Serve into a tall glass. Top with Mumm Champagne. Garnish with grapefruit slice and rosemary twig.
