Hot Paloma
Ingredients: โข 1 1โ2 oz Tequila Altosย Reposado โข 1 oz Fresh lime juiceโข 1โ2 oz Triple sec โข 1โ2 oz Agave syrup โข 2 Jalapeรฑo coins (seeds removed)ย Method: โขAt the bottom of a cocktail shaker, muddle the jalapeรฑo coins with agaveย syrup. โข Pour the remaining ingredients into shaker, fill with ice, and shake untilย ย chilled. โข Strain into a salt-rimmed rocks glass filled with fresh ice. โข Garnish with a lime wedge. |
Palomette
Ingredients: โข 40 ml / 1 1/3 parts Altos Plata โข 20 ml / 2/3 part Grapefruit Licquor (Pamplemousse) โข 10 ml / 1/3 Fresh Lemon Juice โข Top with Mumm Rosรฉย Method: โขAdd all ingredients to a shaker with ice. โขShake. Serve into a coupette. โขGarnish with grapefruit twist. 30ml = 1oz |
Better Together
Ingredients: โข 30 ml / 1 part Altos Reposado โข 10ml / 1โ3 part Aperol โข 25ml / 5โ6 part fresh lime juice โข 15ml / 1โ2 part vanilla infused Earl Grey syrup* โข Mumm Champagneย Method: Build ingredients in a shaker, shake, and fine strain, serve in a champagne flute and top with Mumm champagne. 30ml = 1oz |
Pacific Standard
Ingredients: โข 45 ml / 1 1โ2 partsAltos Plata โข 30 ml / 1 part Aperol โข 23 ml / 3โ4 part Carpano Antika โข A barspoon of Green Chartreuseย Method: Build ingredients in a stirring glass, stir, serve up with a flamed orange peel in a coupete. 30ml = 1oz |
Mexican Negroni (Bottled)
Ingredients: โข 250ml / 1 part Altos Plata โข 250ml / 1 part Campari โข 250ml / 1 Part Red Sweet Vermouthย Method: Build ingredients in a stirring glass, stir with cubed or rock ice in an old fashioned. Garnish with an orange slice. 30ml = 1oz |
Feliz Martini
Ingredients: โข 60 ml / 2 parts Altosย Plata โข 15 ml / 1โ2 part Cocchi Americano โข Amontillado sherry 3 dashesย Method: Build ingredients in a stirring glass, stir, and strain. No ice, serve in a coupete. No Garnish. 30ml = 1oz |
Jalisco Aรฑejo Sazerac
Ingredients: โข 60ml / 2 parts Altos Aรฑejo โข 15ml / 1โ2 part agave syrup โข 3 dashes Peychaudโs Bitters โข 5 ml / 1 barspoon Pernod Absintheย Method: Rinse a chilled Old Fashioned Glass with Pernod Absinthe, set it aside. In a mixing glass, add the Altos Reposado, agave syrup, and bitters. Stir with ice. Discard the Pernod Absinthe and pour the Altos Reposado mix in the Old Fashioned glass. Garnish with a lemon twist. 30ml = 1oz |
Altos Aรฑejo Manhattan
Ingredients: โข 60ml / 2 parts Altos Aรฑejo โข 30ml / 1 part red vermouth โข 2 dashes of grapefruitย Method: Stir over ice, strain into a chilled cocktail or coupette glass. Garnish with an orange twist. 30ml = 1oz |
Spiced Old Fashion
Ingredients: โข 60ml / 2 parts Altos Reposado โข 5 ml / 1/6 part agave syrup โข 2 dashes of chipotle bitters or anyย smoked chili or a mix of half smokedย chili and half chocolate mole bittersย Method: In an old fashioned glass, stir the agave syrup and the bitters. Add Altos Reposado and fill with ice. Stir. Squeeze a grapefruit twist on top.You can also use a stirring glass. Dissolve the bitters with the agave syrup and half the mesure of tequila. Add ice, stir. Then add the remaining ounce of tequila and stir again. Serve in an old fashioned glass andย squeeze a grapefruit twist on top. 30ml = 1oz |

Paloma Royale
Ingredients: โข 50 ml / 1 2/3 parts Altos Plata โข 25 ml / 1 part Fresh Lemon Juice โข 15 ml / 1/2 part Agave Syrup 1/1 โข 30 ml / 1 part Fresh Grapefruit Juice โข 30 ml / 1 part Mumm Brutย Method: Add all ingredients to a shaker with ice. Shake. Serve into a tall glass. Top with Mumm Brut. Garnish with grapefruit slice and rosemary twig.ย 30ml = 1oz |
