Each creative process is unique. When any of us imagines, designs and brings to life a particular creation, it is a singular moment resulting in something much greater than the sum of its ingredients—something with a life and soul of its own.

A signature cocktail synthesizes the life experiences, personality, preferences, taste, point of view and opinions of the confectioner. It may reflect the flavors and aromas of the place where the maker grew up; their upbringing and culture; their way of thinking and acting; their life orientation, and—why not—maybe even their common sense. A signature cocktail is as special and authentic as the person who created it. 

We want to invite you to share your Altos Paloma proposal recipe and a spectacular photo to your social media!

The cocktail that best reflects an authentic lifestyle and tells a story that captivates from head to toe will be the winner of the 2021 Altos Paloma.

The winner will be announced in the June Newsletter, on the Tahona Society’s social media accounts, and will also be included in the Altos Tequila global strategy booklet.

Recipes of our Favorite Altos Palomas

1. Palomada by Dre Masso, Global Ambassador and Co-creator of Altos  

Celebrating Mexico’s obsession with fresh fruit spiked with salt and chile, the Palomada is a lush, tropical concoction that’s perfect for a sunny day. Not as pink as you would expect a Paloma to be, it definitely still has that recognizable grapefruit profile. Fruity, aromatic, spicy and very authentic.

Ingredients 

  • 60 ml / 2 parts Altos Plata (Discover Altos Plata Flavor Wheel )
  • 20 ml / 2/3 part fresh grapefruit juice 
  • 40 ml / 1 1/2 parts smashed mango
  • 20 ml / 2/3 part lime juice
  • 10 ml / 1/3 part agave syrup
  • 20 ml / 2/3 part chamoy top
  • pinch of chamoy & Tajin 

Method 
 

Add all ingredients to a shaker with ice. Shake. Serve into a rocks glass rimmed with chamoy and Tajin. Garnish with a mango peel. 

30 ml = 1oz 

2. Altos Crafted Paloma by Rodrigo García, ex-former Brand Education Ambassador of Pernod Ricard México 

In 2016 Rodrigo faced the challenge of innovating the signature drink for the whole Pernod Ricard portfolio. The result? The Altos Crafted Paloma!

Ingredients

  • 60 ml / 2 parts Altos Plata
  • 60 ml / 2 parts fresh pink grapefruit juice 
  • 30 ml / 1 part lemon juice
  • 15 ml / 1⁄2 part agave syrup
  • pinch of salt 

Method

Pour all the ingredients, except the juice, into a glass rimmed with salt and pink peppercorns*. Mix using the Altos molinillo to dissolve the agave syrup. Fill the glass with ice and finish with the pink grapefruit juice. Garnish with a half slice of pink grapefruit.

30 ml = 1oz 

*Pink peppercorns may present a nut allergy risk. 

3. Sparkling Paloma

Although the creator of this drink is unknown, it’s a fun and easy way to enjoy Altos with everyday ingredients. In addition to being delicious, it’s uncomplicated—easily recreated at home—yet goes well beyond the “tequila and soda” long drink.

Ingredients 

  • 60 ml / 2 parts Altos Plata or Reposado 
  • 15 ml / 1/2 part agave mix / agave honey 
  • 15 ml / 1/2 part lemon or lime juice
  • Craft grapefruit soda 
  • pinch of salt 

Method 

Pour ingredients into a highball glass rimmed with salt. Stir to dissolve the agave mix. Add ice, top with soda.

4. Pinche Cha Paloma by Cha Ramírez, Global Advocacy Manager of House of Tequila 

“The name of this drink literally translates to F@#king Carlos Paloma… I was looking to create a drink for the next day after a party night out. In Mexico, we go for a beer with clamato along with seafood, and spicy salsas. It’s inspired of course by the Bloody Mary, but is very Mexicanized with the Tajin, salsa and tequila. I love to serve this paloma at brunch and events. Try different garnishes and also different chiles.” 

Ingredients

  • 60 ml / 2 parts Altos Reposado
  • 10 ml / 1/3 part fresh lime juice
  • 30 ml / 1 part fresh grapefruit juice 
  • 30 ml / 1 part tomato juice
  • 3 dashes of spicy sauce
  • 1 dash of celery bitters 

Method 

Add all ingredients to a shaker with ice. Shake. Pour into a tumbler rimmed with salt and chile mix. Garnish with a celery stalk, slice of grapefruit and pickled chiles. 

30 ml = 1oz

5. Paloma Royale by Simon Kistenfeger, Altos Global Ambassador 

“This grown-up version of a crafted paloma may seem like it has the same ingredients, making it fruity and floral. The top-up with Mumm champagne gives it a drier, elegant and very delicate profile. Perfect for brunch…or anytime!”

Ingredients

  • 50 ml / 1 2/3 parts Altos Plata
  • 25 ml / 1 part fresh lemon juice
  • 15 ml / 1/2 part agave syrup 
  • 30 ml / 1 part fresh grapefruit juice 
  • 30 ml / 1 part Mumm Brut

Method

Add all ingredients to a shaker with ice. Shake. Pour into a tall glass. Top with Mumm Brut. Garnish with a grapefruit slice and rosemary twig. 

30 ml = 1oz

6. Tinglet Paloma by Megs DeMeulenaere, Altos Global Ambassador 

“My favorite style of cocktails are less citrus forward and more stirred spirit forward. So I love taking stirred classics and putting Altos tequila spin on them. This is my Paloma.”

Ingredients

  • 50 ml / 2 parts Altos Plata
  • 30 ml / 1 part Ting cordial soda* 

Method 

To make the Ting cordial soda: Over medium heat, reduce the Ting soda* until the liquid is halved. Let it cool & reserve.

Combine the ingredients in a stirring glass. Stir. Strain into a coupette glass. Garnish with grapefruit zest. 

*Or use whatever grapefruit soda you have at home.
